Thanksgiving is just around the corner. Make sure to make your checklist as we approach the special holiday. Whether you may be planning on hosting a big feast for family or being a guest at a friends dinner table. Either way it may consist of you preparing or bringing a contribution item to the meal.

Pumpkin Cheesecake Bars
  • Prep: 15 min. Bake: 45 min. + cooling
  • 16 Servings
  • 15 45 60               Ingredients
    • 1 cup all-purpose flour
    • 1/3 cup packed brown sugar
    • 5 tablespoons cold butter
    • 1 cup finely chopped Diamond of California® Pecans
    • 1 package (8 ounces) cream cheese, softened
    • 3/4 cup sugar
    • 1/2 cup canned pumpkin
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 1-1/2 teaspoons ground cinnamon
    • 1 teaspoon ground allspice




    Directions

    • In a large bowl, combine flour and brown sugar. Cut in butter until crumbly. Stir in pecans; set aside 3/4 cup for topping.
    • Press remaining crumb mixture into a greased 8-in. square baking pan. Bake at 350° for 15 minutes or until edges are lightly browned. Cool on a wire rack.
    • In a large bowl, beat cream cheese and sugar until smooth. Beat in the pumpkin, eggs, vanilla, cinnamon and allspice. Pour over crust. Sprinkle with reserved crumb mixture.
    • Bake for 30-35 minutes or until golden brown. Cool on a wire rack. Cut into bars. Store in the refrigerator. Yield: 16 bars.

    Coconut Cupcakes
    Prep: 15 min, Bake: 20 minutes & cooling
    Two dozen
    Ingredients
    • 7 oz. Shredded coconut
    • 3 c. Sugar
    • 2 c. Milk
    • 6 eggs
    • 5 tbsp. Corn starch
    • 2 tbsp. softened butter
    Directions:
    Preheat oven 350°. Mix all ingredients. Spoon mixture into cupcake cups
    Bake about 20 minutes or until golden brown and firm. Cool
     
  • Prep: 15 min. Bake: 15 min. + chilling
  • Yield: 10 Servings

  • 15 15 30 Ingredients
    • 3 eggs
    • 1 cup sugar
    • 2/3 cup mashed cooked butternut squash
    • 3/4 cup all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon ground cinnamon
    • 1 cup finely chopped Diamond of California® Walnuts
    • Confectioners' sugar
    • FILLING:
    • 1 package (8 ounces) cream cheese, softened
    • 2 tablespoons butter, softened
    • 1 cup confectioners' sugar
    • 3/4 teaspoon vanilla extract
    • Additional confectioners' sugar, optional




    Directions

    • Line a 15-in. x 10-in. x 1-in. baking pan with waxed paper; grease and flour the paper and set aside.
    • In a large bowl, beat eggs for 3 minutes. Gradually add sugar; beat for 2 minutes or until mixture becomes thick and lemon-colored. Stir in squash. Combine the flour, baking soda and cinnamon ingredients; fold into squash mixture. Spread batter evenly into prepared pan. Sprinkle with walnuts.
    • Bake at 375° for 13-15 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack for 10 minutes.
    • Turn cake onto a kitchen towel dusted with confectioners' sugar. Gently peel off waxed paper. Roll up cake in the towel, jelly-roll style, starting with a short side. Cool completely on a wire rack.
    • In a small bowl, beat the cream cheese, butter, confectioners' sugar and vanilla until smooth. Unroll cake; spread filling evenly over cake to within 1 in. of edges. Roll up again. Cover and refrigerate for 1 hour. Just before serving, dust with confectioners' sugar if desired. Yield: 10 servings.
